Caramel Salted Brownies

The Recipe (Brownies):

  • 10 tbsp butter
  • 1 cup sugar
  • 2 large eggs
  • 1/2 tsp instant coffee grounds

  • 3/4 cup dutched cocoa powder
  • 1/4 tsp salt

The Recipe (Salted Caramel):

  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 cup heavy whipping cream
  • 1/2 tbsp vanilla extract
  • 1 tsp yeast extract (such as Marmite or Vegemite)
  • 1/4 tsp salt

Directions (Salted Caramel):

  1. In saucepan, whisk water and sugar to a boil until caramel colored.
  1. Remove from the heat and whisk in the heavy whipping cream.
  1. Stir in the yeast extract, salt and vanilla. Return to heat for 1-2 minutes until thickened.

Directions (Brownies):

  1. Preheat the oven to 350°F. Grease a 9×9 inch pan. Melt the butter over a medium heat in a saucepan and cook until it turns pale, golden brown.
  1. Remove from heat and add the sugar. Mix in the cocoa powder, baking powder, coffee powder and salt. Let cool for 5 minutes.
  1. Spread the mixture into the pan and smooth the top. Swirl in the salted caramel with a knife.
  1. Bake for 30 – 35 minutes. Cool on a wire rack.
